The Grey Goo are groups of out-of-control self-replicating nanobot "bubbles". Once you're spotted, it will continually chase your ship. If you get too close, it will start directly damaging your hull, even through a shield, similarly to Splitter Ancients. Shooting at it will drop a few Nanobots, but shoot it too much beyond that and many small nanobot "bubbles" will explode omnidirectionally outward, spelling certain death for the player unless it was killed at an extreme range.
